March 2025: Fireback, the authentic Thai restaurant by EHV International and Michelin star Chef David Thompson, is bringing its renowned flavours to the shores of Chennai, with an exclusive pop-up at Sheraton Grand Chennai Resort & Spa, Mahabalipuram from 14th – 16th March. Available exclusively for dinner, this experience will showcase the rich heritage of Thai cuisine, crafted with Fireback’s signature fire-grilled technique and contemporary finesse.
Fireback is an exciting Thai restaurant and bar with the legendary Chef David Thompson as Culinary Director and Chef Kaustubh Haldipur as Brand Chef. In the background of an old Portuguese bungalow, Fireback serves authentic Thai food at a picturesque riverside setting in Siolim, Goa. There is both a literal and figurative inspiration behind the name, the former drawing from Siamese Fireback, the national bird of Thailand, signifying our focus on authentic Thai offerings, and the latter reflecting in the fire-grilled cooking technique used in many of the dishes.
Fireback is partnering with Sheraton Grand Chennai Resort & Spa, Mahabalipuram, a luxurious beachfront retreat that seamlessly blends elegance with coastal charm, situated along the scenic East Coast Road(ECR). With breath-taking views of the Bay of Bengal, world-class hospitality and award-winning dining experiences, it is the preferred destination for leisure getaways, weddings and corporate retreats.
For three nights only, diners in Chennai will have the opportunity to savour Fireback’s celebrated menu, featuring a thoughtfully curated selection of true Thai favourites, including Raw Papaya Som Tam, Dry Panaeng Curry of Raw Banana & Pulled Pork and Green Curry, served with steamed jasmine rice. The vegetarian highlights include Ma Hor, featuring pineapple, cherry tomato, and palm sugar and Grilled Sweet Potato with gorlae sauce. Guests can then savour the comforting Coconut & Galangal Soup before moving on to mains like Banana Leaf-Wrapped Tofu in red curry marinade. The non-vegetarian highlights include Grilled Southern Lamb with gorlae sauce and Banana Leaf-Wrapped Seabass in red curry marinade. To conclude, the dessert selection features Cashew Nut Pudding with caramelized taro, Coconut & Jaggery Ice Cream, and Tropical Fruits with perfumed syrup and crushed ice.
